Ingredients

  • 4 pc chicken drumstick
  • 1 tsp dried ginger powder
  • ¼ tsp salt
  • ¼ tsp white pepper powder
  • 1 pc spring onion
  • ½ pc shallot
  • 2 tbsp maltose
  • 1 tsp Shaoxing rice wine
  • 200 ml white vinegar
  • 100 ml red vinegar

Direction

  1. Marinate chicken drumsticks with dried ginger powder, salt, white pepper powder, spring onion and shallots.
  2. Wrap drumsticks with a bowl with plastic wrap, let them marinate for at least three hours.
  3. Stir and boil white vinegar, red vinegar, maltose and Shaoxing wine for a mixture.
  4. Boil the drumsticks for short while.
  5. Soak drumsticks in the mixture.
  6. Take drumsticks at least two hours to air dry.
  7. Air fry drumsticks for 15 minutes at 170°C
  8. Flip over the drumsticks and air fry for 2 more minutes at 200 °C
